Flashed-Chilled vs. Cold Brew: Flash-chilling is the process of brewing coffee with hot water and then cooling the coffee down very quickly vs. cold brewing where coffee is extracted over a long period of time with cold water. Flash-chilling is a nice option because it is a much faster process and extracts more of the flavors and volatile compounds of a coffee than a cold brew does, maintaining more of the complex fruit notes. Cold brew, however, is a great option for those wanting a less pronounced acidity and a heavier mouth feel.
