You know those coffees you remember because they had such a distinct and memorable flavor note? We have been chasing a big blueberry natural process Ethiopia since our Gedeb Lot 83 back in 2017 and we finally have it. A big old blueberry bomb! Introducing our Banko Chechele Supernatural. It’s decadent and plush with tasting notes of (you guessed it) blueberry, black cherry, and blackberry preserves. If you love a blueberry forward natural process Ethiopia, we highly recommend snagging a bag!
What is a supernatural you ask? It is when enhanced or experimental processing methods are employed, along with naturally processing the coffee, to create complex and fruit-driven cups. In the case of this microlot, red ripe coffee cherry was sealed into carbon fiber drums for an anaerobic (devoid of oxygen) fermentation for 7 to 10 days at 15-18 degrees Celsius. During this stage, the sugars from the coffee cherry fruit further develop to create even more intense fruit notes than typical of a traditional natural process. After fermentation, the coffee cherry is laid out to dry on raised screen beds until it is then moved to a climate controlled warehouse for further resting, then milled/bagged, and then finally shipped.
