A number of you have been asking and we’re super excited to announce we have a new lot of Wilton Benitez Pink Bourbon! And, yes, we think this new 2025 lot is as good as 2023’s lot which scored 98 points and was named the number one coffee of 2023 at the Coffee Review. Some of our most talked about coffees come from renowned coffee producer Wilton Benitez and this coffee is such a stunner. It’s juicy, sweet, and creamy with tasting notes of pink bubblegum, strawberry blossom, and blackberry buttercream. It is a must-try for those seeking a special and ultra unique coffee experience.

About the coffee. This particular lot is a Pink Bourbon, a variety discovered and grown in Colombia known for its intense floral notes, pleasant acidity, and a higher glucose content producing a sweeter, silkier cup. Couple this unique variety with Wilton’s meticulous and innovative processing at the farm level and the result is a truly magical coffee.

About Wilton Benitez. A chemical engineer turned high end coffee grower, Wilton Benitez is at the forefront of innovation in coffee processing. Through fermentation technology and strict processing protocols, he is discovering endless possibilities for enhancing and highlighting the unique and special characteristics of his carefully cultivated coffees while also eliminating the variables that can cause flavor degradation or variance. Processing of this particular Pink Bourbon lot started with sterilizing selectively harvested ripe coffee cherries with ozone gas and ultraviolet light and then a thermal shock treatment. The coffee cherry was then pulped and fermented in an anaerobic bioreactor where specific yeast strains were added. The coffee was fermented for 36 hours, washed, and then taken to ecological drying equipment where the drying curve was configured.
