Two firsts for JBC! This is our first time offering the exotic coffee variety Papayo and our first time working with notable coffee producer Nestor Lasso, a young producer making waves in the specialty coffee industry. This enchanting natural process coffee comes from his farm El Diviso and it’s bursting with yellow and red fruit notes. The Papayo variety is known for complex tropical fruit notes and a unique coffee cherry shape which is pointy and oval-shaped resembling a papaya (hence the name). Couple this unique variety with meticulous natural processing at the farm level and the result is a truly lovely coffee that is thick and juicy with tasting notes of dragon fruit, cherry bubblegum, honeysuckle, yellow tropical fruit (think banana and papaya), green apple, and strawberry. Farm Level Info. Introducing the next generation of coffee farmers! At just 27 and 26 years old, Nestor Lasso and his brother Adrian Lasso run their farm El Diviso (taking over from their grandfather and El Diviso founder, Jose Uribe Lasso, at just 22 and 21 years of age) in the notable coffee growing region of Huila, Colombia. They have gained global recognition for their innovations at the farm level; unique and rare coffee varieties; and experimental processing techniques. Known for their high quality specialty coffee lots, they have made a splash at the World Barista Championship and recently won first place in the Irish Brewers Cup. Their commitment to exceptional quality and sustainable growing practices has turned them into one of Colombia’s specialty coffee powerhouses and all of their hard work can be tasted in this beautiful cup of coffee.
