We are so excited to introduce our new Meridiano Ecuador. This exceptional coffee is grown by Mario Hervas on his 25-acre farm Finca Meridiano. Mario is a grower passionate about producing quality coffee and it shows in the cup. This particular lot is made up the the coffee variety Typica Mejorada (or Mejorada) which interestingly enough is not a Typica varietal at all. It is actually a Bourbon variety cross pollinated with an Ethopia Landraces variety. And that explains the beautiful florality to this coffee (think Magnolia) coupled with a sugary sweetness akin to panela along with notes of green apple, honey, and melon. It is truly a unique and elegant cup. We highly recommend!
Farm Level. Six acres on Finca Meridiano are dedicated to coffee which is carefully cultivated and tended to create the highest quality possible. The coffee is picked at optimum ripeness where it is then depulped the same day before being fermented underwater for 30 hours. The coffee is then dried on raised beds in a greenhouse for 20–24 days.
