New Coffee! Asobombo Pink Bourbon

There is something so elegantly sweet and floral about a Pink Bourbon varietal and this lot is a shining example of this unique varietal. Our Asobombo Colombia is a single varietal offering that is resplendent with tasting notes of peach preserves, candied almond, clover honey, magnolia and strawberry. A hybrid of Yellow and Red Bourbon varieties, the Pink Bourbon varietal was first discovered and grown in Colombia. It is known for its intense floral notes and pleasant acidity. The Pink Bourbon varietal also has a higher glucose content which produces a sweeter cup and silkier body.
 
This coffee was grown by farmer members of the Asobombo Cooperative in Pitalito in the famous coffee growing region of Huila, Colombia. Farms here tend to be slightly larger than other regions of Colombia (around 3 to 5 hectares compared to the typical 1 to 3 hectares.) Members and their families selectively handpick ripe red cherry and process the cherry on their farms. Coffee cherry is pulped in small handcrank pulpers and then fermented in tanks for 12 to 36 hours. The coffee is then washed and laid in parabolic beds or on patios to dry.
