About. This coffee comes from smallholder farmers from the mountainous region Cajamarca in Peru. This region is known for producing high end coffee due to its high elevation; quality-focused mindset of its farmers; and abundance of high quality varieties like Typica, Bourbon, and Caturra. The coffees are usually depulped the same day they are harvested and given a 12–18-hour open-air fermentation before being washed clean of mucilage. (The fermentation time may be longer in cooler areas at higher elevations.) This particular lot is a blend of Peru’s most popular varieties including Caturra, Typica, and Bourbon. Coffees from this region are known to be sweet, fruity, and floral and this lot is a testament to that. Enjoy.
