Introducing our La Piragua Pink Bourbon by Alexander Vargas: a renowned and award-winning coffee producer in Colombia. We can’t seem to stay away from Pink Bourbon coffees recently and for good reason: this high sucrose variety is delectable on a good day and phenomenal when paired with meticulous growing practices and processing. This lot is no different. It’s bright, juicy, and full of lovely notes like Valencia orange, meyer lemon, yellow florals, and red fruits. In our cupping notes, we called it charming, very nice, and interesting.
About the producer. Alexander Vargas has been a finalist in the Colombia’s Cup of Excellence an impressive four times and is a well-known name amongst coffee growers in Colombia. His coffee journey began at the age of 15, following in the footsteps of his coffee-producing parents in the renowned coffee growing region of Huila, Colombia. At the age of 20, Vargas decided to delve into the world of specialty coffee, shifting his focus more to high-quality coffees and exotic varieties. He likewise put energy into diversifying his crops (which lends to better farm and environmental health-not to mention higher quality coffee production) introducing dragon fruit and other crops. At La Piragua, Vargas has implemented variations of both washed and natural processes, all with meticulous care during every stage of the process. This specific coffee lot was fermented in an anaerobic environment for 36 hours before it was then washed and dried on raised beds for 15 days.
