This lovely coffee is jammy and fruity, highlighting everything we love about a Pink Bourbon. It’s bubble-gummy and juicy with tasting notes of strawberry jam, hibiscus, rosewater, jasmine, and blueberry.

About the farm. This coffee is a single variety Pink Bourbon grown by Jamir Munoz on his farm Buena Vista in the La Muralla village of Huila, Colombia. Munoz has been cultivating coffee for 20 years which has proven to be the most sustainable and rewarding economic activity for his family, especially as he continues to focus on higher grade, specialty coffees like this Pink Bourbon lot. During harvest,  meticulous care is given on the farm level to produce the highest level of quality possible. Coffee cherries are handpicked at peak ripeness every three weeks (every two weeks during the rainy season.) After harvesting, the cherries are sorted by floating to separate out the less dense beans. The coffee then undergoes an oxidation process for 36-48 hours and is then depulped. After depulping, it is fermented for another 36-48 hours, washed 2-3 times, and dried on raised beds.

About the variety. The Pink Bourbon variety has grown immensely in popularity in recent years due to its fruit-forward cup characteristics, intense floral notes, and pleasant acidity. This variety also has a higher glucose content which produces a notably sweeter cup. It was at once thought to be a natural mutation of the Red Bourbon variety (hence the name Pink Bourbon) but recent genetic testing has found it is actually most genetically similar to Ethiopian Landraces. What is for sure, is that this variety is notably sweeter and fruit-forward.
