There is something so elegantly sweet and floral about a Pink Bourbon coffee and this lot definitely stands out. Our Asobombo Colombia is a single variety offering that is resplendent with tasting notes of passion fruit, pink lady apple, hibiscus, and almond. Once thought to be a hybrid of Yellow and Red Bourbon varieties, it has since been discovered that Pink Bourbon is actually genetically linked to Ethiopia Landrace varieties with one of its closest siblings being the Geisha/Gesha variety. It is known for its strong floral notes and pleasant acidity. This variety also has a higher glucose content which results in a sweeter cup and silkier body.
This coffee was grown by farmer members of the Asobombo Cooperative in Pitalito in the famous coffee growing region of Huila, Colombia. Farms here tend to be slightly larger than other regions of Colombia (around 3 to 5 hectares compared to the typical 1 to 3 hectares.) Members and their families selectively handpick ripe red cherry and process the cherry on their farms. Coffee cherry is pulped in small handcrank pulpers and then fermented in tanks for 12 to 36 hours. The coffee is then washed and laid in parabolic beds or on patios to dry.
